- canned chickpeas – 400 grams (drain and rinse);
- fresh parsley – a quarter cup (chopped);
- fresh cilantro – a quarter cup (chopped);
- quarter of a small onion (finely chopped);
- garlic – 2 cloves (press through a press);
- ground cumin – 1 teaspoon;
- ground coriander – the second part of a teaspoon;
- cayenne pepper – a quarter of a teaspoon (optional);
- flour – 2 tablespoons (regular or almond for a keto diet);
- baking powder – the second part of a teaspoon;
- salt and black pepper – to your taste;
- vegetable oil – for frying.
Ingredients for tzatziki sauce:
- Greek yogurt – 1 cup;
- cucumber – half a vegetable (grate and squeeze out excess moisture);
- garlic – 1 clove (chopped);
- fresh dill – 1 tablespoon (chopped);
- olive oil – 1 tablespoon;
- lemon juice – 1 teaspoon;
- salt and black pepper – to taste.
Step-by-step preparation of the dish:
- In a food processor, combine the pre-soaked chickpeas with bunches of parsley and cilantro, add the onion, a couple of cloves of garlic, a pinch of cumin and coriander, a little cayenne pepper (optional), and flour with baking powder. Season with salt and freshly ground pepper. Mix, but do not bring to a puree state – there should be a slight texture.
- Blind small balls or flattened cutlets, using about two tablespoons of minced meat for each item.
- Heat vegetable oil in a frying pan over moderate heat. Fry the falafel in small batches, about 2-3 minutes on each side, until golden brown and crispy.
- Transfer the fried falafel to paper towels to remove excess oil.
- For the sauce: in a small bowl, mix thick yogurt, grated fresh cucumber, crushed garlic, finely chopped dill, a little olive oil and lemon juice. Add salt and pepper to taste. Before serving, put it in the refrigerator for a quarter of an hour so that all the ingredients “make friends”.
